Cucumber and Tomato Salad

I needed to come up with a potluck dish in a pinch and with my CSA to the rescue, I made this very tasty salad.  The cucumbers that I used were huge and it still felt like it wasn’t enough, but with a party of 20 people, it actually worked out great.  Adjust according to the amount of people.  If you just wanted to make it for yourself, it will store nicely for a few days.

I have to admit that I didn’t really measure much here, I just threw some things together. This can be more tomato or more cucumber or equal amounts; your choice!!

Gather Up:

  • 1/2 cup Balsamic vinegar
  • 1/8 to 1/4 cup Olive Oil (I used a light olive oil here as sometimes EVOO can be strong in certain salads)
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 2 Large Cucumber (chopped, you can leave in seeds or scoop them out and then chop)
  • 4 Roma Tomatoes or more (chopped)
  • 5 Green onions (chopped)
  • 3 tablespoons of fresh basil

Whisk the first four ingredients into a small bowl.

Throw the last four ingredients into a medium to large bowl and then pour the contents from the small bowl over the veggies and use hands to mix it up.  Once everything has had a chance to incorporate really well, you can pour out any excess liquid mixture.  Let cool in fridge or eat right away.
