Grilled Salmon with Hazelnuts

You gotta love the Pacific Northwest for the seafood!  I decided to cook a Kokanee that Casey caught last summer with my Uncle John.  I have always thought it interesting that John, who has an incredible passion for fishing, doesn’t even like to eat fish unless it is smoked.  He is the master of cooking it to perfection in his smokehouse!  He will also share the fresh caught with friends and family.  I remember once going fishing with Uncle John.   I was pretty proud of what I came home with!  Man.. I wish I still had those boots 🙂

And just for fun I had to throw in this picture of my Grandpa Don.  He is pretty proud of these little fish and those are some great boots too!

Gather Up:

  •  Large fillet of salmon or two small fillets
  • 2 cloves of garlic, minced
  • juice from one lemon
  • 1/4 cup honey
  • 1/4 cup olive oil (light or EVOO)
  • 1/4 cup coconut aminos
  • 1/4 water
  • 1/2 cup hazelnuts, chopped

Whisk all ingredients together except salmon and hazelnuts.

Pour into a 13×9 pan and let the salmon marinate for about 2 hours in the fridge.

When ready, heat grill to 400 degrees.  You can put a cedar plank on the grill rack while it heats and then place the salmon on that to cook for some more flavor.  Sprinkle on the hazelnuts.  Grill until meat is flaky and just turning opaque, about 20 to 25 minutes. This turned out perfect!!

Wonderful post…it makes me almost teary-eyed to see your images of the Pacific Northwest…and the proud fishergirl photo is very nostalgia-provoking!…My Dad was an amazing fisherman, and passionate about it…and he involved us in his 5:00 am fishing expeditions…we grumbled..but always ended up loving it…it gave him such joy to share his wealth of angling expertise…

    This recipe is bookmarked with stars…and if only I had that fresh-caught salmon…here in France I’m obliged to usually buy the fattier, Atlantic salmon fresh..although I try to buy wild when the budget permits…and I ALWAYS buy Pacific Northwest wild smoked salmon…it is SO much better than the scottish smoked salmon often referred to here as “the best”….

    Thank you for providing me with the numerous recipes and dinner quandry solutions…You have literally “saved” me countless evenings when I have no idea what to make that is paleo-friendly for me that my entire family will enjoy…and enjoy they do!…I’m slowly converting them, in great part due to your healthy and gastronomic site…Bravo.
