I was recently lucky enough to speak with Dr. Allison Siebecker for a few minutes about gut health.  You can check out her website on SIBO (Small Intestine Bacterial Overgrowth) here.  She mentioned to me that she makes her own Greek yogurt.  It is a very simple process although prep to finish takes about a day.

Happy Leap Day!!

Here is a great treat from a recipe that I modified from Paleo Parents.   Prep time is minimal and you have the option of making regular size cupcakes or small, bite size.  The bite size makes a lot and are perfect to take to a potluck or other social gathering.  I actually made 12 regular size cupcakes and had enough batter leftover so I made 12 smaller ones too. This is a great one to trick your friends with as there really is no way to tell the difference between a “regular” cupcake and these.  A wonderful option is to freeze the little ones and grab one when you feel like having a quick treat.  They will last quite a while in the freezer.

Superbowl Sunday

Today is the day of Superbowl Sunday in the United States.  The final football game of the season with the champion AFC team playing the champion NFC team.  Not only can the games get pretty exciting, it can be even more entertaining watching the brand new and mostly clever commercials.  The half-time show can be fun and sometimes scandalous.   It’s sort of like a box of chocolates I suppose, “you never know what you are going to get.”

Grain-Free Chocolate Cake

I have seen a few recipes over the last couple of years for grain-free chocolate cake.  The ingredients and amounts all vary slightly.  It’s almost hard to go wrong really.  I have had people recently ask me about making a birthday cake.   This is not super sweet which is perfect.  Just enough for some nice chocolate bliss!  We also have a recipe on our site for orange cake which is also pretty delicious.

Grain-Free Cinnamon Muffins

My oldest daughter asked me to make cinnamon rolls.  Those of you who have no flour in your house at all know this can be tough.  I admit that I do miss cinnamon rolls…sometimes, but working at a local donut shop when I was in high school pretty much cured me from craving such things too often.  I found a great recipe here at the Cavewoman’s Kitchen and modified a bit with what I had.  The result was fantastic and kid approved!

Here is another recipe from our own Thanksgiving feast this past week.  It has a good balance of sweet and tart, and is very easy to make ahead of time.  By itself, it can be used as a simple small dessert, or it can be combined in any number of ways with other foods as a seasoning for turkey or pork, or as a topping to something like the cheesecake cheats.
