Sweet Potato Salad with Chives

For this recipe you could use either homemade mayo or greek yogurt. I usually make my own yogurt, but you can also get store bought.  Just make sure it is full-fat.  Fage is a good brand.  This is a bit of a twist on potato salad with some different herbs.  I always think potato salad tastes best when it has sat in the refrigerator for a while, letting all the flavors incorporate nicely.  This salad was no exception as once I made it we ate it right away, but the leftovers were even better the next day.

Black Cherry and Strawberry Salad with Black Cherry Vinaigrette

Down at our local Farmer’s Market, I stumbled upon a booth where a kind lady was selling flavored olive oils and flavored balsamic vinegars. It’s as if the booth was calling my name! So many flavors to try that it was hard to settle on just one.  I ended up getting some grapefruit balsamic vinegar and also a black cherry balsamic vinegar.  Mixing up your salads with these different flavors can add some life back into your veggies.  Here is the link to Navidis in case you want to purchase the oils and vinegars for yourself.  They also have other seasonings and salts, but I have not tried those yet. Also at the market, I purchased a “salad basket” with all items edible, flowers and all!

Salsa Verde Fresca

Fresh salsa is by far my favorite condiment…I love to have it with a huge variety of other foods, or simply all by itself.  And as much as I usually find myself eating red salsas with lots of tomatoes and onions in them, it is refreshing to change things up with a tangy green salsa like this one.

Homemade Greek Yogurt

I was recently lucky enough to speak with Dr. Allison Siebecker for a few minutes about gut health.  You can check out her website on SIBO (Small Intestine Bacterial Overgrowth) here.  She mentioned to me that she makes her own Greek yogurt.  It is a very simple process although prep to finish takes about a day.

BLT Salad with Homemade Mayo

This is really two recipes in one! This was my first attempt at making homemade mayonnaise and I was pretty proud of myself that it turned out perfect!  Making mayonnaise takes quite a bit of patience, but in the end you will be happy that you didn’t rush it!  I have always enjoyed BLT sandwiches, but bread is now out so what to do?  Make a salad of course!  The amount of time this took was just cooking the bacon, so 20 minutes. This recipe offers great variety as you can add any other veggies, meat, or herbs/spices to your salad to fit your taste buds!

Superbowl Sunday

Today is the day of Superbowl Sunday in the United States.  The final football game of the season with the champion AFC team playing the champion NFC team.  Not only can the games get pretty exciting, it can be even more entertaining watching the brand new and mostly clever commercials.  The half-time show can be fun and sometimes scandalous.   It’s sort of like a box of chocolates I suppose, “you never know what you are going to get.”
