Pumpkin and Apple Chili

I am pretty proud of myself with this recipe. I basically took some  fall fruit and veggies from our CSA and threw in some elk meat, the tomatoes I canned, and anything else that sounded good, to make this yummilicious chili.  Local, organic, seasonal produce is so extraordinarily wonderful!  I highly recommend signing up for a CSA near you.  You will not regret it one bit!! This is a quick and easy recipe to throw into the Crockpot.

Brazilian Chicken Curry

Today is the 31st anniversary of the eruption of Mt. St. Helens.  That has absolutely nothing to do with this recipe whatsoever, but just thought I would share 🙂 Here in the Pacific NW it is a big deal to ask, “where were you when the mountain blew?”  Well, according to my mom, I was in bed.  It was an early Sunday morning after all.  We take for granted the fact that we live near a volcano.  We see it every day, beautiful now with all the snow covering it.  If you are in this area during the late spring through the summer, definitely check out the observatory and get up close.  The power of the blast and the damage it caused in just a few short minutes, well, to say it was incredible is an understatement.  It is hard to wrap your head around.

Pot Roast with Veggies

So after that big Thanksgiving feast and maybe spending most of your evening before the big day in the kitchen and then the day of preparing and  cleaning up, how about something easy for Friday that you can throw into the crockpot?  You can hit Black Friday with a vengeance and not have to worry about dinner when you get back with your coveted items as it will be ready to go right to the table.  Or, if you are like me, maybe you just want to rest the day after and take it easy.  Whatever your tradition, this is sure to be a delicious and quick meal.
