Chicken Fajitas

Tomorrow is Cinco de Mayo – so what better recipe to post today than one inspired by the great flavors of Mexican and Southwest cuisine.  While purists may complain that fajita traditionally refers to a specific cut of beef, no one can argue that the word today has been broadened to include any number of meats seasoned, grilled, and mixed with sautéed bell peppers and onions and served with a healthy helping of guacamole.

This recipe needs to marinate overnight, so you’ll want to run out and get the ingredients today so that you can have these ready to serve at your fiesta tomorrow!

Guacamole Coleslaw

Some of my favorite side dishes are guacamole (who needs chips?  Just eat it with a spoon!) and creamy coleslaw.  So the idea of combining the two together didn’t seem like too much of a stretch to me.  The lime in the guacamole gives the acidity and “bite” in place of vinegar, and the avocado provides the creaminess.

Margarita Pork Chops

This recipe is packed with flavor and requires very little prep work before starting it on the grill.  The trick is using highly acidic lime juice for a short marinade, followed by basting the meat regularly while cooking at a slightly lower temperature to continue adding flavor.  While you’ve got the grill heated up, you can also cook some seasonal veggies along side and baste them at the same time for a unique combination.

Tropical Lime Chile Brined Pork Chops

With summer in full swing, backyard cookouts and parties are often based on beach and tropical themes.  In that spirit, here is a pork chop recipe for grilling that is infused with the tropical flavors of pineapple, mango, and lime.  Add some freshly ground ancho chile powder for just a touch of heat, and some assorted other flavors, let them brine for half the day, and you’ve got the perfect main dish for a pool-side cabana party!

Strawberry Rhubarb Ginger Salsa

It’s June, and that means that local strawberries are starting to signal the arrival of summer here in the Pacific Northwest.  There are tons of recipes out there for fresh strawberries, not the least of which is simply eating them by the fist full.  I like to look for unique ways to use common ingredients, and while the pairing of strawberries with rhubarb may not be entirely unique, adding ginger, jalapeño, lime, and cilantro might be.

Lime Curry Sirloin Steaks

Here is another simple wet rub grill recipe, which happens to complement yesterday’s curry ginger butternut squash quite nicely.  I carried over the cilantro and ginger from the squash recipe, but decided to use Thai red curry paste (and some ground coriander) for a little departure from the Indian curry powder used for the squash.  And instead of vinegar for the acidity in the rub, I found lime juice worked very well – producing a bit of a blend of southwest and Asian-inspired flavors.
