Black Cherry and Strawberry Salad with Black Cherry Vinaigrette

Down at our local Farmer’s Market, I stumbled upon a booth where a kind lady was selling flavored olive oils and flavored balsamic vinegars. It’s as if the booth was calling my name! So many flavors to try that it was hard to settle on just one.  I ended up getting some grapefruit balsamic vinegar and also a black cherry balsamic vinegar.  Mixing up your salads with these different flavors can add some life back into your veggies.  Here is the link to Navidis in case you want to purchase the oils and vinegars for yourself.  They also have other seasonings and salts, but I have not tried those yet. Also at the market, I purchased a “salad basket” with all items edible, flowers and all!

BLT Salad with Homemade Mayo

This is really two recipes in one! This was my first attempt at making homemade mayonnaise and I was pretty proud of myself that it turned out perfect!  Making mayonnaise takes quite a bit of patience, but in the end you will be happy that you didn’t rush it!  I have always enjoyed BLT sandwiches, but bread is now out so what to do?  Make a salad of course!  The amount of time this took was just cooking the bacon, so 20 minutes. This recipe offers great variety as you can add any other veggies, meat, or herbs/spices to your salad to fit your taste buds!

Pomegranate, Apple, and Walnut Salad

Our last post of the year! Happy New Year to you and yours! May it be the healthiest year ever for you!

Tasty tasty salad here! I could eat this entire salad by myself!!  If you are planning a get together for New Years Eve, this would make a great potluck dish as you could easily double it (along with the Bacon Wrapped Dates mentioned above).  Please notice in the picture below that I finally got a backsplash in my kitchen, hooray!!  Thank you Uncle Joe!!

Sesame Chicken Salad

The weather is finally supposed to be really nice this weekend here in the PNW, which means that everyone will be outside trying to get lots of Vitamin D built up in the next few days.  And while grilling is a favorite way to prepare a meal when the weather gets nice, it can sometimes be a little much to serve hot food when you’re working on getting acclimated to the first real warm days of the season.  A nice alternative, especially for lunch on the porch on a hot afternoon, is a chilled salad with plenty of meat mixed in.

This recipe came to us from a friend, Amy, at the gym – whose husband Brad is also one of the trainers.  She had adapted it from a recipe of a friend of hers, eliminating the original recipe’s brown sugar, fried won tons, and soy sauce in favor of some less problematic ingredients.  Of course, we made a few adjustments of our own…but mostly based on what we had on hand at the time.  Get this made up just after breakfast so it has a chance to sit and chill in the fridge until lunch – letting the flavors mix and mingle a bit before eating.

Orange Hazelnut Salad with Red Wine Vinaigrette

This is a tasty and easy salad to throw together for just about any meal.  The sweetness of the mandarin oranges blends perfectly with the bite of red wine vinegar in the dressing, while roughly chopped hazelnuts (filberts for those native to the PNW) add just a little crunch for texture.

Mint Vinaigrette

Here’s a great easy dressing for salads that would also go well over a variety of other veggies like steamed broccoli, riced cauliflower, or blanched asparagus.  A full batch saved in a glass container in the fridge should last several days (assuming you don’t use it all up sooner).
