Black Cherry and Strawberry Salad with Black Cherry Vinaigrette

Down at our local Farmer’s Market, I stumbled upon a booth where a kind lady was selling flavored olive oils and flavored balsamic vinegars. It’s as if the booth was calling my name! So many flavors to try that it was hard to settle on just one.  I ended up getting some grapefruit balsamic vinegar and also a black cherry balsamic vinegar.  Mixing up your salads with these different flavors can add some life back into your veggies.  Here is the link to Navidis in case you want to purchase the oils and vinegars for yourself.  They also have other seasonings and salts, but I have not tried those yet. Also at the market, I purchased a “salad basket” with all items edible, flowers and all!

Strawberry Rhubarb Ginger Salsa

It’s June, and that means that local strawberries are starting to signal the arrival of summer here in the Pacific Northwest.  There are tons of recipes out there for fresh strawberries, not the least of which is simply eating them by the fist full.  I like to look for unique ways to use common ingredients, and while the pairing of strawberries with rhubarb may not be entirely unique, adding ginger, jalapeño, lime, and cilantro might be.

Strawberry-Rhubarb Crisp

You know I love crisps if you have searched our site, as you will also find blackberry and cherry crisps and an apple-cranberry crisp.

With strawberries and rhubarb in season and getting some rhubarb at the CSA last week, why not make up a nice treat? The sweetness of the berry offsets the tartness of the rhubarb for a perfect combination.

Shredded Chicken Strawberry Salad

As the afternoons get longer (and, in spite of daylight savings, we also seem to be gaining daylight earlier in the morning as well), and the sun starts making appearances more than bi-weekly here in the PNW, our thoughts turn to spring and summer.  About the same time, we start to see strawberries arriving in the local market.  Now, I know they are not really local and nowhere near in season yet.  But before someone chastises us over buying some organic strawberries that are from southern California (unless you live there), consider that after finally plucking the mushrooms off that have formed behind our ears from so many months of wet and dark…a little indulgence to make us feel the sunshine can really help brighten the week.

So, if you are like us and need a little brightness amidst the spring thaw or mixed rain showers, then go ahead and pick up a quart of as-local-as-possible strawberries and give this refreshing salad a shot.  And if you’re really, really strict about waiting for them to be straight from your garden (when they really do taste the best), then bookmark this one for sometime in early June when most of us will actually see a fresh strawberry in its natural environment.

Strawberry Cherry Walnut Salad

This is a perfect salad in early summer, when the strawberries and cherries are both in season and available at road-side stands and farmers markets all over the northwest.  It’s also a nice treat once in a while out of season.  Yes, I know they are not local this time of year, but occasionally you need a reminder that winter will eventually end…and some sweet dark berries is a good way to do that.
