Chicken Pot “Pie” Soup

In the past we have enjoyed a great chicken pot pie recipe, but of course the word “pie” generally insinuates some type of crust which often contains wheat.  I suppose I could have made up my own crust from almond flour or another grain-free flour, but really lets be honest… I just like the filling.   This is delicious and smells so good!  You can use most any type of vegetables that you have on hand for this.  “Think outside the recipe.”

Grain-Free Cinnamon Muffins

My oldest daughter asked me to make cinnamon rolls.  Those of you who have no flour in your house at all know this can be tough.  I admit that I do miss cinnamon rolls…sometimes, but working at a local donut shop when I was in high school pretty much cured me from craving such things too often.  I found a great recipe here at the Cavewoman’s Kitchen and modified a bit with what I had.  The result was fantastic and kid approved!

Chicken with Cherry Sauce

There are so many types of cherries!  I cannot even begin to tell you.  I say pick a cherry type you think would be great for this recipe and give it a shot.  The regular “pie” cherry that you would use to make a cherry pie would work great too.  I used Rainier cherries for this go around.  This recipe offers many great combinations of tastes and is quick to make.

Today my dad turns 65.  Happy Birthday Dad!!  I know my dad would say that he is proud of me, but I must say that I am more proud of him than any daughter could be.  He is the best dad and a wonderful grandfather.  My dad has taught me to be grateful for what I have, to be genuine, to take responsibility for your actions, and to fight for what you believe in.  Mostly he has taught (and given me) love and respect and always makes me laugh.  I love you dad!!  This recipe is for you and your sweet tooth!!

Rustic Raspberry Tart

I love summers in the PNW.  Unfortunately, it seems this year the sun has only decided to warm us up in the last week… of July!  Well, even though the sun wasn’t showing it’s shining face, at least I had something to associate with the warm weather and that is the fresh taste of raspberries.   My favorite thing is to just eat them plain, but this time I decided to try a tart. Remember, this is a dessert.  Enjoy, but don’t eat a lot of it!
